First, the default is to directly read the mail spool, rather than go through IMAP. You always have the option of doing that. That can be set in Webmin -> Webmin -> Usermin Configuration -> Usermin Module Configuration -> Read Mail. From there, you can set "Mail storage format for Inbox".
If you want to continue using IMAP, and you don't want it to read directly from the mail spool, you could always setup IMAP to listen on port 143, but use a firewall to block access from outside of your server.
