The way it's installed now I get a popup with whether I want to save or open the php file instead of a page when I browse to mydomain.com/phpmyadmin.

yes, it is probably wise though to install it in your main domain under a sub, like myadmin.domain.tld

Sounds like something's not configured correctly -- do you get any errors in the Apache log that suggest what's not working?
Does PHP work properly for other domains?

No errors that I can see in the apache log and all other php pages are working fine...
