Take a peek in System Settings -> Virtualmin Config -> Backup and Restore.
There, you can change what compression tool is used, as well as tweak the parameters passed into that program during the backup process.
In your case, you may want to try passing in the "--fast" option.
Some folks who have a lot of disk space choose to not use any compression at all... which does really speed things up but takes up quite a lot of space.
