It's possible to use both Outlook and iPhone's with your email. As for your incoming and outgoing mail server -- you could use your server's IP address, hostname, or any domain that runs on it.
If that doesn't work -- what error is it you're getting when you try?
And what shows up in your mail logs, in /var/log/maillog or /var/log/mail.log?

My iphone worked! But here is the error with outlook
Log onto incoming mail server (IMAP) - Completed Send test e-mail messege - Failed
Send test e-mail messege: The server responded: 450 4.2.0

I went into Advanced, changed the encryption type to "auto" and it worked!

My iPhone stopped getting mail? I get this popup now
Cannot Get Mail The mail server "ip_address_here" is not responding. Verify that you have enterd the correct account info in Mail Settings.
It was working perfectly, now it does not?
Is Outlook still working? It's just your iPhone that's not able to connect?
You could always try restarting Dovecot to see if that helps:
/etc/init.d/dovecot restart
