The default reply to in all my installations seems to be
eg. peterhunt.domain.ca@domain.ca
rather than
Is there a setting that I can fix this with globally?

I am having the same problem. When composing mail or replying to mail in SquirrelMail, the sender address contains the full virtualmin user id (which includes the domain) before the @ symbol instead of translating it. There is documentation on how to fix this problem in UserMin's ReadMail at http://www.virtualmin.com/documentation/id,troubleshooting_common_problems/ but I haven't found similar instructions for how to fix SquirrelMail.
